    before i start making and submitting a parkour map idea I have in mind, is there such a thing as too many entities in a parkour map? because that might be a problem...

    of course it is a problem. why you need entities in a map anyway

    make it peaceful
    then /gamerule doMobSpawning false
    then /kill @e[distance=..10000]
    if u do this they wont spawn and you will remove all of them
