I don't know, but probably to save information or kick afk players (without the restart they could be afk for ages).

well; they restart the server for multi purposes I believe.
first: to kick afk players[less lag I guess]
2nd:to get clear the lags[not always working]
3rd: to refresh the server; a server that hasn't been refreshed or whatsoever well eventually get very laggy and buggy so that will prevent it from happening
4th: to make the server active
5th clear item lag from factions and such

The reason they restart the server is those reasons but it also applies updates to plugins and bug fixes.

You can't update plugins while the server is online, that's right, but a restart is a too little period to update a big plugin.
To update plugins you would have to close the server for a while. (or make the restart last longer)

It can be automated so the server is down for slightly longer so the plugin can be installed but it is usally small updates.

All I wanted to said is that you can't update all plugins in just a server restart. I know that for little plugins it can be automated, and I thought that doesn't work for big plugins. I don't think the restart is used to update plugins, too. But if you think so, you can be right. Idc.
